Pecan PieFor Thanksgiving, I typically make, among other things, a pecan pie. I make my own crust. This is typically with Alton Brown’s recipe. Note that it makes enough dough for two nine-inch pies. For filling, I use a recipe from an old, beat-up cookbook with a half-melted spine.

½ cup sugar
3 eggs
1½ cup pecans
½ stick butter
pinch salt
1 teaspoon vanilla
1 cup corn syrup

  1. Cream sugar and butter
  2. Add eggs, one at a time, beating thoroughly after each one
  3. Add other ingredients
  4. Pour into unbaked pie shell
  5. Bake at 350° for 45-60 minutes
