On the Foodies’ Night In Twitter chat this week, I alluded to a Thai peanut dressing I made. When making it the first time, my family was skeptical, but they were won over pretty quickly. They asked that I share the recipe.

Unfortunately, this is what I’ve been working off of:
Thai Peanut Dressing

Not exactly user friendly. Here is what it says (with a few tweaks).

  • 2 Tablespoons cornstarch
  • 1/2 Cup Cold Water
  • 1/4 Cup Low-Sodum Soy Sauce
  • 1/2 Cup Smooth Peanut Butter (160 grams)
  • 1/4 Cup Brown Sugar
  • 1 Tablespoon White Vinegar
  • 2 Teaspoons Sesame Oil
  • 1 Cup Warm Water

Dissolve the cornstarch in 1/2 cup cold water. Whisk rest in saucepan over medium heat until sugar is disolved, stir in cornstarch mixture, simmer until sauce is thick.
